"Tonburi"is a processed food made from the mature fruits ofKochia scoparia, an annual plant. It comes in small, bead-like granules about 1–2 mm in diameter and is often used as an ingredient to enhance texture in dishes. Its unique, popping mouthfeel is reminiscent of fish roe, making it particularly enjoyable. Due to this characteristic, it is often referred to as"field caviar"in Japan and"mountain caviar"overseas. The place where it is cultivated is a unique and special location, as it is the only one of its kind in the world.
